1 tablespoon rock salt
1 teaspoon freshly ground black
peppercorns
For the marinade
1/2 cup Kikkoman soy sauce
juice of 1 lime
1/2 cup mirin
1/8 cup white sugar
1/2 tablespoon Dashi
2 tablespoons ginger, grated
1/2 cup radish, grated
2 tablespoons lemongrass core,
finely chopped
1/8 cup cilantro leaves, chopped
1 cup olive oil
